Meat Fish Cheese use their fully free ranging British charcuterie pigs to make a classic, perfectly seasoned farce and encase it in a hot water crust pastry. The pastry is made using the duck fat that the team confit all of their garlic and duck legs in, giving it a flaky, mildly garlicky flavour. After cooking, the pies are topped up with the same jelly that's used in their famous pâté en croutes.
