We’re thrilled to bring Bray Cured – a Berkshire-based artisan producer that’s quietly revolutionising British charcuterie – into the fold here at Farmfetch. Styled as ‘New British charcuterie’, Bray Cured is herding a fresh wave of creators who borrow from Italian, Spanish and French curing traditions but use locally reared meat and flavour profiles to give a firmly homegrown feel.

Starting out as a passion project by founder Alex Mugan in 2021, the secret to Bray Cured’s success is its modern mindset. “We're about new flavours and combinations,” says Alex. “I love to create in the kitchen, using a bit of a feel to put things together that comes across in our cured meat but with more precision, and we aim to keep bringing out different and surprising ideas.”

This comes alive on the plate through their award-winning Cacao-Spiced Venison Bresaola lean cuts of rich, almost wine-like, wild- caught British venison bathed in English vermouth and seasoned with salt, ginger, cloves and cacao nibs for a lively lift. With this philosophy, it’s only natural that Bray Cured rubs shoulders with its equally imaginative neighbours, Michelin-starred The Fat Duck and Waterside Inn.

Bray Cured has a serious, personal respect for its craft. Working exclusively with nearby farms, the brand sources homegrown pork from rare breeds raised on proper pasture. No industrial shortcuts, no artificial accelerants – simply old-school, handmade curing techniques (Alex and the team have even named their converted whiskey barrel meat smoker, ‘Smokin’ Joe’) and small production runs that honour both the produce and centuries of tradition. The result? High welfare, pedigree British charcuterie that’s won 17 Great Taste Awards, and deserving of top spot on your next antipasti board.
