Welsh Lamb: Best Cuts and Where to Buy It Online

Sep 1, 2026

Raised on the salt-flecked, mineral-rich pastures of Wales, Welsh Lamb has a natural sweetness and tenderness that sets it apart from lamb reared anywhere else. It's why chefs and home cooks alike reach for it first, and why it's worth knowing exactly what you're buying.

Wales' varied terrain, from lush lowland fields to open hillside, means lambs graze on a genuinely diverse diet, developing lean, well-marbled meat with a distinctive, delicate flavour. Combined with free-range, grass-fed rearing, that's a very different eating experience to intensively farmed lamb.

Sourced from Douglas Willis

Our Welsh Lamb comes from Douglas Willis Butchers, a third-generation family of farmers and butchers in the Usk Valley who've been perfecting their craft since the 1930s. Their pasture-to-plate model, rearing much of their own stock and hand-butchering everything in-house, recently earned them Best Butcher (Wales) at the 2026 Countryside Alliance Awards. It's the same quality lamb served in Michelin-recognised kitchens, now delivered straight to your door.

Choosing your cut

For a classic Sunday roast, the Boneless Leg of Welsh Lamb carves easily and stays wonderfully moist, while the Boneless Shoulder of Welsh Lamb rewards slow, low cooking with meat that falls off the bone. Entertaining? The Welsh Lamb Rack and French-trimmed cutlets look as good as they taste. Midweek, Welsh Lamb Mince makes the perfect shepherd's pie, and Welsh Lamb Shanks turn a slow cooker into a Sunday-worthy meal with almost no effort.

Whichever cut lands on your plate, season simply, roast low and slow if you're cooking a joint, and rest the meat properly before carving so the juices settle back through.
