Gin
The British gin revival didn't come from nowhere. It came from small distilleries - often run by one or two people with a copper pot still, a deep knowledge of botanicals, and a very clear idea of what they wanted to make. Between 2010 and 2020, the number of gin distilleries in Britain went from fewer than a dozen to over 800.
